Huevos rancheros, or 'ranch-style eggs' is a traditional Mexican breakfast, but we think it's great at any time of the day. You can easily modify the recipe to suit your tastes, or even improvise with what ingredients you have lying around. You could add leftover onions, rice, guacamole, or simply tinned beans.
Ingredients:
- 3 tbsp olive oil- 1 Red pepper, chopped
- 1 Green pepper, chopped
- 1 Red chilli pepper, finely diced
- 2 Cloves of garlic, crushed
- 1 Can of chopped tomatoes
- 4 Eggs
- 4 Tortillas
- Sea salt and black pepper
- 50g Mature cheddar cheese
How To Do The Thing:
1. Heat the oil in a large frying pan over medium heat. Add both peppers, chilli, and garlic. Cook, stirring frequently for 5 minutes.2. Add the tomatoes. Bring to a boil and reduce the heat to a simmer and cook for 15 minutes. The sauce should now be thick.
3. Using a spatula, make a well within the sauce. Crack an egg into the well. Make a well for each of the eggs. Leave the eggs so that they poach in the sauce.
4. Heat the tortillas in a microwave on high heat for 20 seconds. Spoon the eggs and sauce into the tortillas. Season with salt and black pepper, and top with the cheese.
